Analytics

It might be nice to have some form of analytics to see how popular our pages are.

Requirements:

• Privacy preserving, self-hosted.
• Non intrusive / does not require us to show a cookie banner / notice.
• GDPR compliant (either by not processing PII through anonymization or with a compliant privacy policy).

Notes on priority:

• Not too important for now, but wanted to have the idea archived / a thread so we can discuss things.
• I do want this for my personal websites as well eventually. We might be able to re-use the tooling that I'm going to write for this (and possibly the instance if we want).

For now we might be able to simply enable access logging on Nginx. We can remove IP addresses and maintain an overview for future analysis.
