Move factsheets to Myst markdown ? #21

Addressing a Problem?
Instead of using quarto to render the factsheet, we could just use myst-nb, so all the documentation would be in the same format.
For deployment, either we build the HTML using sphinx, or link to the readthedocs.
This is low priority, since nothing is broken and the current setup works well.
