Move pygeoapi depency to latest release #22

Addressing a Problem?
As far as I understand, there are two issues that forced us to use our own fork
- no support for pydantic v2
- send progress update before adding job
I think these two are now fixed in 0.22. Relying on vanilla pygeoapi instead of a fork would simplify the installation logic.
I'm currently testing this out.
