Help custom model text recognition

I read the documentation but not know how to custom model text recognition without using pretrained and only using pretrained of backbone as documentation of text detection on ImageNetDataset. For example, I want to custom model SAR for vietnamese handwriting recognition and don't want to use pretrained of SAR and only want to use pretrained of RestNet31 on ImageNet. Please show me how to do?
