difference between inference model and pretrained model

hello guys,
what about if i want to train paddlerOcr model on my custom dataset i installed paddellabel then i prepare my dataset
what should i do after that is there any config should i add to refer to mydataset to train model on it also i got some confusion about which model should i use for training inference or pretrained model aslo should i train three model (detection,recognition,classification) on my custom dataset can any one please provide me with steps to can train and export my pdmodel or can i export it as onnx
