[Orchestrator] Dependency tech debt and deep_space replacement #468
Description
The orchestrator, and consequently steward, depend on an old fork of deep_space and ethers-rs. This prevents us for upgrading other, more minor dependencies because they conflict with the forked dependency trees. We need to upgrade these and other dependencies, resolve any breakages in the code, and thoroughly test. This will also pave the way for testing replacement of deep_space with ocular.
