Log support for Elixir SDK

I would like to use the PostHog logs product in Elixir. While it can be done manually using OTel, it would be nice if it was baked into the Elixir lib.

We don't really have this baked in into any library, so I suggest you just set up OTel using your logging client of preference.

I'll keep this open, but we're unlikely to work on this anytime soon since our approach for logging will be for a long time to just plug into otel.
