Updating CS new hire PostHog curriculum in handbook

Adding new sections for:
 - LLM Analytics
 - Error Tracking
 - Billing + Add-Ons
 - Surveys/Workflows/Logs

Cleaning up existing sections by adding more links and reorganizing for more natural flow.
