CV

We typically have a single CV representing ratio of the standard deviation to the mean for the whole model. It might make sense to have some options here but we should discuss if a CV for each crop etc. is appropriate

i.e. 'cv_einkorn_labour' seems like it should not be much different than other CV in te model, unless we have really good evidence for what will happen in these 60 years
