Dig into / Re-org utils program

Background

We have a monolithic program from previous pilots to load functions into the global environment. These functions are used mostly for formatting tables and figures form previous pilots. There are also a few functions built for ADaMs workflows.

Concerns are on the usefulness of the functions. How we load the functions and how we organize and access the functions/

Definition of Done

• Review programs for ADaMs
• Purge unused ADaM-focused functions
• Review tabling functions once Tables are being worked
• Purge functions not needed for Tables
• Reorganize workflows to use utils program (TBD)

I don't think we need any of these functions anymore honestly.

If we use gtsummary() there should be functions there to helps us do any formatting

the convert_json_to_rds is a hack to use P21 which I don't think is needed either
