Apicurio unusable

The Apicurio that is installed as part of Day In the Life is unusable.

Recommended that [this installation](https://github.com/RedHatWorkshops/dayinthelife-integration/blob/master/support/install/ansible/playbooks/openshift/roles/provision_apicurio/tasks/main.yml#L5) of Apicurio be removed / replaced, the role in Integreatly already installs *apicurito*
