Add pyproject.toml with setuptools packaging config so EyeWitness can be installed via `pipx install git+https://github.com/RedSiege/EyeWitness.git`. Move data files (bin/, categories.txt, signatures.txt) into modules/ package for proper distribution, extract main() entry point in EyeWitness.py, and document the new installation method in README.md and INSTALLATION.md.
