How do i stop fan control from controlling my motherboard and embedded EC

Also does turning off fan control sensor settings to embedded EC(only Asus) and my motherboard like you see in the image stop them and compeletly or does it still going in default

Also how do i make sure Embedded Ec and the motherboard fan still good

Any of these checkbox do not "control" any of your fans. It just exposes them to be controlled, with the cards we can see in the background of your screenshot. But they are not tampered with as long as you don't actually toggle a control "on".
