fix: remove demo GIF from VS Code README to prevent marketplace freezing

- Created README.vscode.md without the large 7.46MB demo GIF
- Kept the full contributor section as requested
- Updated build scripts to use README.vscode.md for VS Code builds
- This is a temporary fix to test if removing the GIF resolves the freezing issue
