fix: update magistral-medium-latest capabilities to 128k context and image support

- Updated maxTokens from 41,000 to 128,000
- Updated contextWindow from 41,000 to 128,000
- Enabled image support (supportsImages: true)
- Reflects current Magistral Medium 2.0 capabilities per Mistral documentation
