Feature Request: SSI DIM Middle Layer – Upgrade to support PostgreSQL 18.x and adapt Helm Chart

Description

Goal: Upgrade the SSI DIM Middle Layer to use/support PostgreSQL 18.x (edit: was changed from 17.x according to latest TRG updates), thus aligning it with the Eclipse Tractus-X strategy of harmonizing major database versions across all products for long-term support. This upgrade ensures compatibility through the lifespan of Tractus-X 25.12 respectively Catena-X "Saturn" and "Titan" releases.

Why it matters

• Ensures long-term support for the database version
• Gains performance, efficiency, and security improvements of the newer PostgreSQL release.
• Reduces future upgrade risk/effort jumping several major versions and promotes consistency across Tractus-X products.

Acceptance Criteria

1. Update the PostgreSQL configuration (via Helm chart or other deployment settings) to version 18.x
2. Run regression and integration tests during the milestone release to confirm functionality and performance align with expectations from the previous version.

If this cannot be completed in time for the 26.03 milestone release (edit: was updated from 25.12 according to latest alignments) due to technical or time constraints, please document this in this issue / in the release notes and plan it for the next cycle.

Title and description for target version updated to 18.x as per latest Tractus-X Release Guideline changes for PostgreSQL, as discussed in committer meetings/office hours.

The Helm Chart linked below is also outdated and should be updated in the course of this change to 18.x version and a switch of the source image from Bitnami to Cloud Pirates due to licensing reasons.
