Dr. Stephanie Wilson is a nutrition scientist and postdoctoral research fellow at the University of California, Davis in collaboration with the USDA ARS Western Human Nutrition Research Center. Dr. Wilson’s research focuses on how plant-based dietary strategies and the gut microbiome jointly influence human health. She has examined how dietary polyphenols may affect gut health and has also worked on clinical trials exploring how fiber-rich foods can benefit the gut microbial community and support cardiometabolic health.
