Anonymize personal data in Security Onion events

Hi,

Potential customers has a lot of questions about personal data in the events which are part of security solutions like Security Onion. For example, how can you assure that personal data like name, surname, street, username (based on name or/and surname) is not accessible or viewable from the side of analytic who works on security solution. Can you suggest how to handle this or as idea, is it possible thing in a some kind of anonymizing the data.
