i have followed your guide but i don't find Seeeduino XIAO ESP32C3 in board list.
why?

After 2 reprogramming the board is went in loop boot.
If i connect the screen e-ink to pc, device go in loop boot and i can see that usb serial go to loop of connection and disconnection. In this way isn't possibile write a firmware.
i'm tried also to put the board in boot way, pressing hold boot button and pressing one shot the reset button. In this way the loop of boot is stopped, but when i trie to write a firmware with arduino or Esphome Web the connection go in timeout. what other proceduire i can try to resolve this situation?

Same for me. I had to go on the board manager, and force to load the expressif-esp32 board, then select board esp32/XIAO ESP32C3 inthe list

Step 4: "User_Setup_Select.h" doesn't match what's shown in the example. and neither User_Setup_Select.h or User_Setup.h have epaper to uncomment.

I did see that there is the "Online Configuration Tool" but I'm unsure how to implement it correctly. I made a new tab called "drive.h" and pasted the code and uploaded but not getting the display to refresh.

The file name should call "driver.h", not "drive.h". Please try it again~

hi that was a typo when making this comment i did name it "driver.h"

when i run the code it fails to output any serial, i have tested the esp and it is able to output serial. so something is going wrong in the demo code before it gets to open the serial port

Downloaded the Seeed_GFX library again and opened the bitmap demo.

The display isn't refreshing.

I added some serial prints to help debug and code is being executed.
I have the TFT_eSPI by Bodmer V 2.3.43 installed

i did also copy the code into a new sketch and make sure both image.h and diver.h were in the directory before uploading and had the same result.

Please remove the TFT library and other related display libraries first.
