The Grove - Loudness Sensor is designed to detect the sound of environment. Based on LM2904 amplifier and a built-in microphone, it amplifies and filters the high frequency signal that received from the microphone, and outputs a positive envelop. This is used for Arduino’s signal acquisition. The output value depends on the level of sound input. In order to avoid unnecessary signal disturbances, input signal will go through two times’ filtering inside the module. There is a screw potentiometer that enables manual adjustments to the output gain.

So it provides filtered audio output from 0 volts to 3.3 volts? How is this different from a sound recorder?

Probably this is a device to raise a voltage on a line and hold it there for a while when a loud sound is detected, but that's just a guess. The description doesn't say that.

It only outputs a DC voltage value that represents the sound intensity, with an output range of 0 to 3.3V. However, this represents the loudness level of the sound, not an audio signal. It is an analog sensor that converts sound intensity into a corresponding voltage value. The Grove Sound Sensor is more like a "sound intensity meter" rather than an "audio output device". It tells you how loud the sound is in the environment but doesn't provide an audible audio signal. Simply put, the Grove Sound Sensor "detects sound", while a microphone "records sound".
