I would like to change the color of an image like I do in React Native, can I?

To achieve the same effect use can use alpha mask

<Mask mode="alpha" mask={<Image rect={rect(0, 0, 300, 300)} image={iconPng} />}> <Rect rect={rect(0, 0, 300, 300)} color={'green'} /> </Mask>

otherwise, if you want more controls you can go with shaders.

What would be the best way to animate between a 'tinted' image and non 'tinted' image? I don't think it's possible with <Mask /> right?

Mask would work if you have monochrome image (that is the case with most icons)
Otherwise you can always use color matrix as @wcandillon suggested or you can use blend (hue or color) modes also.
