I want to hide Document -> Current Document

And Terminal -> Current Terminal in the menu bar, too. I think these menu entries are useless.

Not possible to hide all these options, although this is really not useless, is the configuration of the current document and terminal, it's very important. Maybe you're referring to the label "Current Document"? But yeah, you cannot hide it.

Why was it there in the first place?

Because the same configuration can be done globally or per project, that's the label indicating that you're configuring the current document.
