How to include special symbols in alphabetical sort.

With the useSortBy functionality, words like Ørsted, Österreichische and Ölgerðin appear separate from the standard characters, whereas I would like them to be treated as the letter they are a modification of e.g. Ø is treated as O, Å is treated as A

Current sorting:

1. Alpha
2. Bravo
3. Oscar
4. Romeo
5. Zulu
6. Íslandsbanki
7. Ölgerðin

Intended sorting:

1. Alpha
2. Bravo
3. Íslandsbanki
4. Ölgerðin
5. Oscar
6. Romeo
7. Zulu

Can anyone advise on how to achieve this?
