fix(devices): Purge EdgeAI release notes & update SW component version

* With AM62A SDK 11.1, Release Notes at [0] is used as single placeholder
for maintaining what's new, known issues, etc. Hence, update this section
to drop references of Release notes.

* While at it, update the EdgeAI SW component version for SDK 11.1
