Remove net8.0-maccatalyst from the list of supported TFMs

For some reason, dotnet refuses to build SharpHook if net8.0-maccatalyst
is present in the list of TFMs. Since it's not supported anymore (unlike
.NET 8 itself), it can be removed from the list of TFMs.
