Provide free-threaded wheels

A few guards will have to be added to the code, in places where we take `&mut self` references. PyO3 guide: https://pyo3.rs/v0.27.1/free-threading.html

The release process will have to be updated as well to publish free-threaded wheels (the ABI wheels won't work for that)
