feat: implement parameter to prevent inclusion of document values in trace attributes

Currently, new document values are being written to trace span attributes, resulting in unnecessarily large trace metadata and increased gRPC payload sizes.

To address this, a configuration parameter should be introduced to disable this behavior when not required.
