New MindMap notes default to light mode because that's the default setting, while the demo MindMap likely has its "mindmapTheme" attribute set to dark. There isn't a shortcut to switch between dark and light mode for MindMaps, but you can set the theme for each MindMap individually. To do this, open the MindMap note, then add or edit the "mindmapTheme" attribute—set its value to either "dark" or "light". This lets you control the appearance of each MindMap independently of the global app theme. The global theme (set in Options → Appearance) only affects the overall application, not individual MindMaps. There’s no documented keyboard shortcut for this action, and theme switching for MindMaps is handled via note attributes or widget controls, not globally or with a shortcut.
