Cookbooks need additional unit tests

While there are a reasonable number of kitchen tests for the cookbooks, unit tests are lacking. Adding unit tests will aid in development and testing and encourage contributions. It probably wouldn't hurt to restructure the cookbook to meet the new standard as well.
