unixodbc install bug on windows 10

The environment.yml file we have here doesn't install properly on windows 10 home. See UBC-DSCI/introduction-to-datascience#446 .

Possible that we can specify that unixodbc is only to be installed on linux/mac, and avoid it on windows.

also see #12 . maybe we just have a shell script. The only issue is figuring out what to do about the 1st edition hard copy, which has a link to environment.yml
