replace MinIO in the wis2box-stack ?

For wis2box-1.3 (sprint-020) we should consider if we want to replace MinIO in the wis2box-stack since it is no longer maintained:

Replacing MinIO with another S3-compatible storage would be significant work and we would need be to be sure the alternative will have long-term support and meets the requirements of the wis2box-users-community.

We should review our options :

• replace MinIO with Garage: https://github.com/deuxfleurs-org/garage (and re-develop missing functionality currently provided by MinIO ourself)
• build wis2box-minio image and run our Trivy security scans and maintain ourself
• ... ?

I found this awesome list of S3 alternatives
If wis2box switches to another S3 compatible storage, it should be rather popular. I compiled the github stars for each project and seaweedFS has the most stars after S3

maintaining the minio image sounds like a huge task ... so I'm not sure if that's the best option
