in man xpra we can read the following

... this mode uses screenscraping which is not very efficient. Video encoders partially mitigate this drawback ...

So, is a video encoder is set by default ? ( it seem not, as I see ~5MB/s )
how can we set it ?

The best encoding will be selected automatically by default: https://github.com/Xpra-org/xpra/blob/master/docs/Usage/Encodings.md

5MB/s is not necessarily a lot, depending on the size of the screen and what is moving on it.
