I noticed the FireFox Videohelper app installs a Intel binary, and since especially Intel's support is numbered, could we get a Apple Silicon compiled ffmpeg?

You might have chosen the wrong one, there is arm version for apple. See https://github.com/aclap-dev/vdhcoapp/releases

Was using the one that the website gave me to download - and now that I checked I see both, yesterday I only saw a single download, and I went back the same route to check for ARM when I noticed the intel executables in the activity monitor, but now I do see both Intel and ARM.
