Update Mongo Version #827
Description
The RITA install.sh file currently installs Mongo v4.2, which reached EOL in April 2023. This ticket is to update Mongo to version 7
4.4 is already EOL
5 goes EOL in just a few months
6 would work, but really that only a year.
So 7?
