How to set alternate path to config file?

Hi!

I've tried setting `INVOKEAI_CONFIG=/path/to/my-config.yaml` but it doesn't seem to work--it's really not clear if this setting can be set via env variable in Invoke's instructions… They only mention CLI argument `--config`.

What's our best option to set a non-default config file to be loaded when using the Service Portal?
