Running Airbyte OSS. Airbyte won't upgrade to the latest version even when I do a 'git pull' for the latest.

It was stuck on an older version even when you git clone again.

git clone https://github.com/airbytehq/airbyte.git
./run-ab-platform.sh

Answer... airbyte allows you to keep to a specific version and to change the local config. To fix this, you have to remove all the local files. Below is a list to remove and then start the server up again and it'll download the latest docker images.
