Please develop StarRocks destination connector.

borasy (@borasy) - Reviewing the StarRocks docs, I see there is Iceberg catalog support:

We have two connectors which can load to Iceberg as of now:

• Community supported Iceberg Destination
• Newer and under active development by the Airbyte team: S3 Data Lake

Would Iceberg destination be suitable for your use case?

I would like to contribute a new destination connector for StarRocks. Does the "not accepting new Java connectors" policy apply to Kotlin? For performance sake, I would like to develop in Kotlin, but will do Python if the policy does apply.
