[Spike] Review dependabot package updates

Description

Dependabot has bumped the version of a couple of core packages but maybe avoid some security issues with varying severity.
Some bumps are to major versions and the migration to NestJS v11 is not a light one.

Acceptance criteria

• Review the bumped versions
• Estimate the impact and effort of the upgrade
• Create a list of impacted areas
