chore: remove .cursorignore file and update .gitignore for .gitkeep files

This commit deletes the .cursorignore file and modifies the .gitignore file to include exceptions for .gitkeep files in the data and logs directories. These changes improve the management of ignored files and ensure that necessary placeholder files are retained in version control.
