Modify aws-eapamq-demo for Ansible validated content

We need to modify aws-eapamq-demo as per the checklist, so that it can be a part of Ansible validated content.
Things to modify

• The content is not a collection as there is no galaxy.yml file, changelogs. Need to collectionize the demo.
• Change the content from Demo to Lab.
• Write documents for each role.
• Need to run ansible-lint “Production” profile in an active Github workflow on the repository.
