Revert "GROOVY-11505: Bump logback to 1.5.11"

This reverts commit ab53955.

Caused by: java.lang.UnsupportedClassVersionError: ch/qos/logback/core/OutputStreamAppender has been compiled by a more recent version of the Java Runtime (class file version 55.0), this version of the Java Runtime only recognizes class file versions up to 54.0
