Stabilize and Extend Anki Integration

Overview
The initial Anki integration has been implemented (notably: note creation), but the code and features require stabilization
Tasks
- Refactor and clean up the card creation code to ensure reliability and maintainability.
- Implement all relevant Anki option features to allow for customization
- (e.g., note type selection, field mapping, deck selection, tagging, etc.).
- Support wrapper fns where possible
- Test the Anki integration for edge cases and expected workflows.
- Document
