Where can I see logs for outgoing requests from the mesh server?

I am running mesh dev without any customizations by just using a .meshrc.yml file to import an OpenAPI spec and pointing it to another local REST server running in the background. I am interested in looking at logs or logging outgoing requests and errors when requests are forwarded from Graphiql through the mesh gateway server to my other REST server. How can I achieve this?

If you set env var DEBUG=1, you can get verbose output.
