[RISCV] Rewrite vlseg tests to avoid riscv.tuple.extract [nfc] (#151003)

Motivated by llvm/llvm-project#150049, we can
directly return the tuple instead of extracting one segment.

(I wrote a quick script to rewrite these; this wasn't done by hand.)
