[zorg][lldb-statistics] Build historic compiler as CMAKE_BUILD_TYPE=Debug

The statistics collection relies on the historic clang/lldb
being debuggable (we need to print variables).

This was an oversight from back when we built the historic
compiler as a 2-stage bootstrap build.
