Fix Docs github action

I think this just involves changing https://github.com/astroinformatics/sopt.git/ ---> https://github.com/astro-informatics/sopt

Might be a good idea to make the docs action manually runnable so that we can test these before merges (see #330)

In https://github.com/ukri-excalibur/excalibur-tests/blob/main/.github/workflows/docs.yml @giordano wrote the docs workflow to deploy to a different site for previewing PRs and to the main documentation only on a merge. That might be good for this project as well. Admitted the commenting could be better but we can always ask him
