docs: Add section for Kubernetes version compatibility

ACK controllers are generally compatible with all Kubernetes API server versions, as they have minimal dependencies and simple deployment structures (single container deployments with service and RBAC). The controllers are continuously monitored and maintained by the ACK team to ensure compatibility with Kubernetes API changes. This information should be documented to help users confidently deploy ACK controllers across different Kubernetes versions.

Hey @abdullahsayyad - i'm thinking that probably we want a new section in "Getting started" called maybe "Compatility Matrix"? we could talk about how ACK is compatible with any kubernetes version etc and maybe have a table of compatility? thank you
