ACK Kinesis Controller - Missing fields from controller spec

Describe the bug
While creating a new Kinesis stream CR the following fields are not available under Kinesis controller spec.

1. Retention period
2. Encryption state
3. Encryption type
4. Tags

Expected outcome
Kinesis stream CR should get created with above fields.

• Kubernetes version - v1.31
• AWS service targeted - Kinesis
