Elasticache docs don't support Valkey consumption #2719

Which section(s) is the issue in?
What needs fixing?
The engine section says The value must be set to Redis.. This should be either redis or valkey - case sensitive per #2711
The transitEncryptionEnabled says This parameter is valid only if the Engine parameter is redis. It is also valid if the Engine parameter is valkey.
There's probably more instances where Valkey consumption is insufficiently documented - still figuring it out.
