Include both coverage and ECDF in default diagnostics

So far, our default diagnostics from Workflow objects visualize the ECDF but return the ECE as a numerical summary. It would be nice to return the log-gamma statistic as a complementary numerical diagnostic and display the new coverage plot (#579) corresponding to the ECE metric.
